Have them sign a contract, vetted by YOUR attorney specializing in ENTERTAINMENT LAW regarding how much and by what method you will be paid. Probably most recording artists can't read sheet music, So you are gonna have to do some sort of demo, or find a partner to do that for you. Basically, you are creating a product or service you want to sell.
