I have played since I was 12, and I applaud your desire.
It is better to learn tab as it is a universal system within the performing/recording industry.
Regarding your initial question, The answer is an absolutely, positively Maybe.
It depends on what you are wanting to achieve.
Chords are strummed, harmony and melody are generally picked.

I never learned tab but it still translates to strumming or picking.

Most of the time, you strum all of the strings. Depending on your fingering, you might mute certain strings or avoid playing the top string, but in general, play all of the strings.

Now, you can get some interesting strum patterns by playing only the top strings for a few beats and then play one beat on the lower strings. You need to play around with it to figure it out.

In tablature, they sometimes show open strings with an open circle, and strings that shouldn't be played with a small x over the string. All of the strings should be played except for those with the x. Good luck!

sometimes, if you want a more delicate sound of the individual note you are playing, but most of the time people play chords.

finger picking is the best

not all of the time sometimes you play just some of the strings
